Three fabrics run through this shelf and they behave differently enough that the choice is really between them rather than between cuts. Bamboo viscose drapes and sits cool, and the plain tees in it are sold in packs of three and six for the obvious reason: people who like them buy a drawer of them. Quick-dry polyester knits are the working fabric: less pleasant to the hand, far better at moving sweat and drying between one walk and the next. Training shirts and most of the polos are cut from them. Merino is the cold-weather one, and it is on this shelf because a base layer is a shirt.
The reason merino costs what it does is the thing it does that nothing else does: it keeps insulating when it is damp and it does not begin to smell after two days out, which turns a three-day trip into a one-shirt trip. Against that, it is slower to dry than polyester and it wears out faster. Part of the shelf carries a UPF figure, on the polos and some of the quick-dry shirts, and where a card does not print one the shirt is not being sold to you as sun protection. Fibre content is printed by weight in descending order, which is what the labelling rules ask of us. Sizes run XS to 3XL.

The layer against your skin
The bamboo viscose tees, in threes and sixes, and the packs are their own cards with their own prices rather than an option buried inside one card. A three-pack works out well under a single tee for the same shirt, which is the argument for buying them that way if you already know the size.
On any day where you will sweat and then stop moving, yes. Cotton holds the water against you and takes hours; a quick-dry knit moves it to the surface and is dry in a fraction of that. On a still day in a chair, cotton is the more pleasant thing to have on, and nobody should pretend otherwise.
The polos and part of the quick-dry range, and the card prints the figure only where the label carries it. A dark, densely woven shirt blocks more ultraviolet than a thin pale one whether or not it has been tested, which is the general rule the dermatologists give, but a printed figure is the only thing we will put a number to.
